Begin by grinding all the necessary ingredients in a food processor until crumbs form that, although loose, will come together when juiced (if they are too dry, add ½ tablespoon of water). Grease a 22 cm tray with butter paper. Press the crumbs into the bottom of the pan and keep in the fridge.

Put the avocado, yogurt, sweetener, juice, and lemon peel in a blender and blend until creamy. Dilute agar-agar in the vegetable broth and bring to a boil for 1 minute. Add the previous cream and stir the mixture again. Pour the mixture on the base and leave it in the refrigerator for 3 hours.
If using gelatin and milk: Moisten the leaves with cold water. Heat the milk without letting it boil. Strain the gelatin sheets and put them in the hot milk. Stir to loosen. Add yogurt and avocado cream.
