Ingredients:
500g of cod, soaked, skin and bones removed
1 liter of milk
2 carrots
1 large onion
olive oil qb
2 cloves garlic
1 bay leaf
50 gm butter
50 grams wheat flour
salt and pepper qb
nutmeg qb
2 dry chats
4 gems

Preparation mode:
1- Turn on the oven at 180 degrees Celsius.
two- Put the butter in a small frying pan, add the flour and let it simmer for some time.
3- From a liter of hot milk, 800 ml is removed and gradually added to the pan. Keep the remaining 200 ml. Cook over medium-low heat, stirring.
4- Mix the dried peas with the milk that has been set aside and let it rest.
5- Peel the onions and chop.
6- Fry the onions in a fine drizzle of oil and add the bay leaf.
7- While roasting, peel the carrots and grate it with a coarse grater.
8- When the onions become translucent, add the crushed garlic cloves with a ripper. Add carrots.
9- Fry a little and add the grated cod. Close after about five minutes.
10- Add the drained and crumbled dry potatoes and mix well.
11- When the béchamel becomes thicker, season with salt, pepper, and nutmeg and turn off.
12- Put the yolks in a bowl, season with a little bechamel and mix.
13- Put the yolks in the bechamel pan, stirring well, until the yolks are homogeneous without the yolks turning brown.
14- Remove the bay leaves from the cod and season with a little salt and pepper.
15th- Add half of the bechamel and mix well.
16- Place the béchamel on a baking tray, distribute it evenly and place the rest of the béchamel on top. Sprinkle with island cheese and breadcrumbs.
17- Put it in the oven for 15 to 20 minutes.
