Students of the Restoration and Catering course of the Instituto Politécnico da Guarda (IPG) have published a recipe book for as much as €2 for all displaced university students (and with little experience in the kitchen). But now with food prices soaring, the focus has shifted to finding new economical recipes for everyone.
according to chef Rui Cervera, second edition of the book Creative recipes in times of crisis It arrives in June and will be available for free on location from the University. However, because we don’t want to make you wait, we have four suggested meals – and a dessert – for under two euros to try.
Chicken couscous with walnuts
The first recipe chef Rui Cerveira and IPG students are dedicated fans of dried fruit chicken. Chicken couscous with walnuts may seem like a dish worthy of a Michelin-starred restaurant (in fact, the taste does not contradict this theory), but the € 1.5 you pay per serving does not lie.
After sautéing the onions, simply add the couscous with 100ml of water or vegetable or chicken stock to add flavour. While you’re waiting, season the chicken with salt and pepper and fry it whole or diced.
The final step is simple: “Add the sautéed onions, peppers, and walnuts plus a tablespoon or two of butter to the couscous and stir well,” says the recipe. Within ten minutes it is ready to be served.
Mint
In addition to being the cheapest meal in the book, this tortilla alternative is also simpler than the original. But before you know how to do that, go get an onion, Courgettesmushrooms and three eggs.
First chop the vegetables and sauté the onion in a pan with a little olive oil and garlic until it starts to turn crumbly. Joined CourgettesAnd mushrooms and parsley and let it cook a little longer.
Then beat the eggs and add to the vegetables. When the “veggies” are done on one side, flip them over to cook the other side. You can accompany rice or salad.
Pizza improvised tuna
This one is for anyone who loves Pizza (without pineapple), but he also wants to prove that it’s healthy. The formula is not much different from Pizza Traditional dishes, and such as this one, pasta is not so tasty without a sauce of ripe tomatoes at the base.
Begin by browning the skinned and seeded tomatoes with the garlic for about five minutes. While you wait, toast slices of bread in the toaster and grab a can of tuna, mozzarella, and oregano.
Spread the tomato sauce over the slices of bread, add the tuna, add the cheese and oregano. Take it to the oven to melt the mozzarella and serve. It costs 2 euros and we assure you that it is worth it.
Vegan nail in bread
We haven’t forgotten about vegans, and until proven otherwise, there’s nothing easier than a vegan nail into baking. All you need are ripe tomatoes, onions, red peppers, and mushrooms.
The first step is to cut the vegetables into thick slices and start grilling them. Then just drive a nail into the bread with the sauce—and serve Chips Sweet potatoes and peanuts for a different twist.
And for dessert: pineapple and ice cream
If you have to bring dessert to dinner or if you need something sweet, a slice of pineapple, a scoop of ice cream, cinnamon, and honey will do the trick.
Start by putting honey and cinnamon on a pineapple slice and put it in the oven for ten minutes. Then, serve it with a scoop of ice cream you have in the freezer and, if you like, add a scoop Palmer to become crunchy.
